Shrimp Pasta in Sun dried Tomato Sauce

This dish requires prepping shrimp, and cutting slimy, oily, sun dried tomatoes. Which may be a little gross. But is totally worth it.

Your tomatoes don’t have to be home grown, dried & packed in oil. I use many off the shelf varieties. And let’s remember that I live in the middle; those shrimps were frozen solid from my grocer’s freezer this morning. (We don’t ask many questions when it comes to seafood where I am … but if you can, fresher is always better!!)

Heat your oil for shrimp and start your water boiling for pasta at the same time. Cook shrimp and garlic on medium/high (depending on your stove and pan) for about 5 minutes. Stir/flip your shrimp every 20-30 seconds to assure they are cooked through, and all sides have touched the pan.

Remove shrimp (I like to keep them in a bowl, with a matching size/shape bowl placed over the top to keep them steaming). Add all other ingredients (except pasta) and bring back up to temp

Lower heat, and simmer until cooked down (1.5-2 cups of liquid should remain). It will turn a lighter shade while simmering, from the heavy cream.

Just before the pasta is finished cooking, add the shrimp back into the cream sauce. Cook through, while rinsing the pasta with cool water. (Don’t skip that step, folks. Your noodles will turn into a solid mass of funk.)

Add freshly grated Parmesan, and serve!

Makes: 4 servings
Prep Time: 20 minutes, Cook Time: 30 minutes

Ingredients:
1/3 cup dried tomatoes, packed in oil
1 minced clove of garlic
1 lb. shelled, deveined shrimp
1/4 cup sliced green onions
1.5 TBSP fresh basil (cut amount in half for dried herbs)
1/4 tsp ground white pepper
1 cup heavy cream
10 oz. dry linguine
grated, fresh Parmesan cheese

Drain tomatoes, reserving 2 TBSPS of oil. Sliver/dice and set aside.
Heat oil in a wide frying pan, over medium-high heat.
Add garlic and shrimp. Cook through, stirring often. About 5 min.
Remove shrimp. Add all other ingredients, except pasta & cheese.
Bring to boil & cook down (10-15 minutes).
Return shrimp to sauce & heat through.

Divide shrimp and sauce over pasta. Top with grated Parmesan.
